Extra Virgin Olive Oil

The production of Extra Virgin Olive Oil at Fattoria Villa l’Olmo dates back to the first half of the 1700s.
The olive groves cover approximately 23 hectares.
The varieties cultivated are Moraiolo, Frantoio, Leccino, and Pendolino.

Pruning is carried out every two years.
Olives are hand-harvested from late October through the first ten days of November.
The olives are cold-pressed on the same day of harvest in the estate’s own mill.

Diadema Extra Virgin Olive Oil is the result of a careful selection of olives from Fattoria Villa l’Olmo.

It shows a bright green color with an intense olive hue at the perfect ripeness, highlighted by delicate golden tones and a good consistency.

On the nose, it is seductive, releasing aromas of freshly cut grass and green tomatoes.

On the palate, it opens with complex flavors of sweet almond, followed by a lingering aftertaste featuring hints of artichoke and ripe olive.
The finish is fruity, with well-balanced spicy notes and a pleasant, delicate touch of pepper in the final sensation.

CANDEGLI Extra Virgin Olive Oil is the result of a special olive harvest and an exclusive selection from Fattoria Villa l’Olmo.

The label is crafted from terracotta to emphasize Diadema’s deep connection to the land and its territory, Impruneta, while the name “Candegli” refers to the exact geographic area of Impruneta where the olives are harvested.

The terracotta label is produced by Fornace M.I.T.A.L., the oldest working kiln in Impruneta.

The combination of hand harvesting and skilled processing gives the final product a vivid and intense green color.

The aroma is captivating and penetrating, while the flavor is delicate yet decisive. Its great balance and incisiveness on the palate make the CANDEGLI Extra Virgin Olive Oil an excellent product that unmistakably enhances the flavor of every dish.
