The production of Extra Virgin Olive Oil at Fattoria Villa l’Olmo dates back to the first half of the 1700s.
The olive groves cover approximately 23 hectares.
The varieties cultivated are Moraiolo, Frantoio, Leccino, and Pendolino.
Pruning is carried out every two years.
Olives are hand-harvested from late October through the first ten days of November.
The olives are cold-pressed on the same day of harvest in the estate’s own mill.
