How many foods today can truly claim such authenticity?
Toward the end of the 1800s, the first mill of the Fattoria was installed, with stone grinders turned by oxen.
Oil extraction was done with manual presses, and the separation from water occurred through natural settling in large terracotta basins.
Although time has brought mechanization to the various stages of production, we have carefully preserved the traditional process to ensure the quality of the final product remains uncompromised.
This is why our olive oil is still “cold-extracted” today — a mark of excellence and purity.
Every step of the transformation, from hand harvesting to milling in our olive press, respects the pace and methods of the 19th century.
We pick the olives by hand to preserve the integrity of the fruit and ensure it reaches the mill whole, where it is transformed into an oil with an unmistakably unique flavor.

Diadema Extra Virgin Olive Oil is the result of a meticulous selection of olives harvested from Fattoria Villa l’Olmo.
It appears with a brilliant green color and an intense olive tone at the perfect stage of ripeness, with delicate golden highlights and a rich, consistent texture.
On the nose, it is captivating, releasing aromas of freshly cut grass and green tomatoes.
On the palate, it opens with complex flavors of sweet almond, followed by a pleasant aftertaste with notes of artichoke and ripe olive.
The finish is fruity, with well-balanced spicy notes and a delicate, lingering hint of pepper.

CANDEGLI
Candegli Extra Virgin Olive Oil is born from an exclusive selection of hand-picked olives from the Candegli area in Impruneta. Its terracotta label, crafted by the historic M.I.T.A.L. kiln, celebrates the deep connection with the land. Intense green in color, it offers a seductive aroma and a delicate yet bold palate, with perfect balance that enhances every dish.
