VINIFICATION
The grapes, carefully selected and hand-harvested at full ripeness, undergo gentle destemming and soft pressing. Fermentation takes place in temperature-controlled containers and is guided by the wild yeasts naturally present on the grape skins.
The must remains in contact with the skins for approximately four weeks, with daily pump-overs to extract the noble components contained in the skins.
Once the skins are separated, malolactic fermentation begins spontaneously—partly in stainless steel, partly in barrique. Each variety is then aged separately for about 15 months in French oak barriques.
To preserve its full organoleptic character, the wine is not subjected to fining or stabilization. After bottling, it undergoes a further refinement of at least 6 months before release.
TASTING NOTES
Deep purple in color, yet not impenetrable, this wine reveals aromas of blackcurrant, lily of the valley, wild blackberry, centifolia rose, and candied violet, with nuances of lavender, Tuscan spigo, and a touch of mustard seed and black pepper for added vibrancy.
On the palate, it is soft yet precise in style, with structure and fruit well-balanced by spicy and balsamic notes. A modern wine, with firm yet approachable tannins and a finish that melts into gentle sweetness while hinting at even greater potential with further aging.
